Pancetta is a cold cut made with pork belly. The meat is firstly trimmed , then salted and let to rest
for some days before before the maturation process which lasts 4- 6 months al least.
According to various regions it can be rolled, extended or “steccata” which means folded and
tightened between two strong wooden boards.
The thin slices have a sweet and delicate taste.
